Institutional Knowledge for Future Years:

Chicken Parmesan- get chicken breasts, not tenderloins. 12 pounds chicken is too much. Make sure you have plenty of cheese and sauce (either make extra sauce or buy cans of it)

Sauce- We only used 2 cans of large Costco San Marzano peeled tomatos...Make 4 cans worth next time.

Meatballs- fall apart really easily when cooked in sauce - need a way to make them more cohesive after frying

General De-thaw meats and things early

Please volunteer to help cook something. Don't worry, you won't be alone. I'm hoping at least a few people can help with each thing to make everything go faster. I (Lizzie) will be in the kitchen all day Saturday to help with everything. If you would realllllly like to see something else on the menu, you can add it as long as you know how to cook it and it fits in our budget.

Cooking in the kitchen begins early Saturday afternoon/late morning.

The Feed starts as close to 6:00 PM as we can get it!
